AVOCADO AND EGG SALAD

Ingredients

6 avocados – peeled, pitted, and cubed
1 teaspoon fresh lemon juice
5 hard-cooked eggs, chopped
1/2 red onion, minced
1/2 cup light mayonnaise
1 tablespoon milk
3 hard-cooked eggs, sliced
1/2 teaspoon paprika

 Instructions

In a serving bowl, toss the avocado cubes with lemon juice. Combine this with chopped egg and onion.
In a small bowl, mix mayonnaise and milk. Blend this to the avocado mixture, mixing gently. Arrange the other set of egg slices in rows over the salad. Top with sprinkles of paprika and serve.
