BABY SPINACH AND SHRIMP ANGEL HAIR SALAD
1 lb angel hair pasta; cooked according to package directions, well drained and chilled
8 cups loosely packed baby spinach, washed and dried
1 1/4 lbs small peeled and deveined shrimp, cooked and and chilled
1/4 cup chopped lightly toasted walnuts
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon minced garlic
1/4 cup extra virgin olive oil
1/4 cup white balsamic vinegar
3 tablespoons chopped fresh parsley
1/2 teaspoon black pepper
1/2 teaspoon kosher salt or to taste
1/2 cup tomatoes
Bring pasta, spinach and shrimp together in a large bowl. Drizzle with walnuts and cheese.
In a small jar, place garlic, olive oil, vinegar, parsley, pepper and salt. Seal and shake to combine. Add this with the salad, toss and serve.
