SMOKED SALMON AND ROTINI SALAD
2 cups Rotini pasta
1/4 c. to 1/2 c. Olive Oil (according to taste)
Fresh squeezed juice of one Lemon
Salt and Pepper, to taste
8 oz. (or more) smoked salmon (soft smoked)
1 c. baby arugula
2 T. capers
1/4 c. shedded parmesan
(Optional- fresh chopped dill)
Prepare and cook pasta as instructed in the label. Drain and contain it in a serving bowl.
Add olive oil, lemon juice, salt and pepper into the bowl of pasta, tossing lightly.
Crumble salmon into small portions and fold it into the smoked salmon. Add arugula, capers, parmesan and herbs (optional).
