SPRINGTIME MACARONI SALAD
2 cups uncooked macaroni of choice
1 medium onion, diced
1 large tomato, diced
1/4 cup chopped green or orange peppers
5 slices American cheese, torn into small pieces
Salt and pepper to taste
1-1 1/2 cups mayonnaise
In a 4 quart cooker, boil 2 quarts of salted water. Once boiling, add the macaroni and stir. Let it come to a boil and cover, cooking for another 15 minutes. Drain.
Transfer the macaroni in a large bowl and add onion, tomato, green pepper and cheese. Cover for 3 minutes before seasoning with salt, pepper and mayonnaise.
Chill covered for up to 4 days.
Makes up to 10 servings.
